One of the breakfast favourites of our Tarsan Tribe: Happy chickpea omelettes! A perfect start of your day. Because it is giving you and your loved ones energy to conquer the mountain – due to its high proteins. Furthermore: soy free, gluten free and egg-free. However full of flavour: yummy!
♡ How to create the magic
Meanwhile prepare the filling for the omelette by chopping the onion, sundried tomatoes, broccoli and grating the carrots.
Furthermore heat some vegetable (olive or coconut) oil in a frying pan and sauté the chopped vegetables for a couple of minutes. Spread the veggies evenly in the pan and poor a ladle of the omelette mix over the veggies. Also add a few spinach leaves and wait until the omelette is no longer fluid. Finally sprinkle the vegan mozzarella on one half of the omelette and fold the omelette in the pan. Serve the omelette as soon as the cheese has melted. Bon provecho!

- 70 grams chickpea flower
- ¼ teaspoon curcuma powder
- ¼ teaspoon paprika powder
- ¼ teaspoon cumin powder
- ½ teaspoon pepper
- ½ teaspoon kala namak
- 140 ml oat milk (unsweetened)

- 1 small onion, finely chopped
- 4 sundried tomatoes (chopped up)
- A handful of spinach leaves
- Finely chopped broccoli (just the flowers)
- 2 tbs grated carrot
- A handful of vegan mozzarella cheese
